Meat is perhaps one of the most popular foods in the kitchen. It is stewed, fried, boiled, baked, and added to pies, salads, and other dishes. In today’s article, I will tell you how to properly cook tender and juicy meat in the oven and also share the most mouth-watering recipes so that you can find an option to your liking.

The best options for baking are boneless pieces of meat, such as tenderloin or fillet. Before putting the dish in the oven, you need to marinate it for at least a few hours, ideally overnight, so that the meat has time to be saturated with the flavors of the spices.

Marinades with kefir and with the addition of basil are ideal for pork, beef – with teriyaki sauce or with mustard and honey, for chicken – beer, spicy-sweet, and yogurt.

If you don’t know what time is optimal for cooking meat in the oven, rely on its weight: usually, one kilogram takes about 60 minutes to cook. However, some varieties take longer to bake because they are tough and fibrous. For example, beef takes longer to cook than pork.

And the last recommendation: to make the meat juicy, it is better to wrap it in foil or parchment. They prevent moisture evaporation, so the dish does not burn or dry out.

The ideal temperature for cooking chicken and fish in the oven is 145 degrees, and meat – 170 degrees. If you want a beautiful golden brown crust to form during the cooking process, unwrap the foil 10 minutes before the end of baking.

Recipe 1: Pork with garlic in foil

To prepare the dish you will need: one kilogram of pork pulp, four cloves of garlic, one lemon, two teaspoons of paprika, four tablespoons of vegetable oil, salt and pepper to taste, and sprigs of thyme and rosemary to taste.

The first step is to prepare the meat. Rinse thoroughly under cold water and then pat the surface dry with a paper towel to remove excess moisture. Next, rub the pork on all sides with salt, make several “pockets” over the entire surface, and put slices of garlic there – this will make the finished dish more flavorful.

In a small bowl, combine the vegetable oil, lemon juice, ground paprika, and ground black pepper, then rub the mixture over the meat until it is juicy, soft, and tender.

Place the pork on a baking sheet lined with foil, add a few sprigs of thyme and rosemary, wrap tightly, and bake in the oven at 190 degrees for one hour.

After the time has passed, unfold the foil, remove the greens, increase the temperature to 240 degrees, and cook the meat for another 10 minutes until an appetizing golden crust forms.

Recipe 2: French meat with potatoes

To prepare the dish you will need: one kilogram of beef “apple”, eight medium-sized potatoes, four onions, 150 grams of hard cheese, 80 grams of butter, a tablespoon of vegetable oil, salt, black pepper, and spices to taste, four to five tablespoons mayonnaise.

Peel the potatoes, put them in a saucepan, add water, lightly salt them, and put them on the stove to cook until half cooked. Then drain the water, cool, and cut into slices about one centimeter thick.

Take a large glass or ceramic mold, grease the bottom and walls with butter, and add a little salt. Then lay out the potato slices in layers, slightly overlapping.

Next, we move on to the meat. Cut it across the grain into pieces about one and a half centimeters thick, wrap each in cling film or a plastic bag, and beat well with a kitchen hammer.

Mix salt, pepper, and your favorite spices (chili, herbs de Provence, curry, etc.) in a small bowl, add vegetable oil and marinate the beef in the resulting mixture. Then place the “chops” on top of the potatoes.

Let’s move on to the bow. Peel it, cut it into half rings, and fry it in a frying pan greased with vegetable oil for about five minutes. The onion must acquire a beautiful golden hue.

Place it along with the butter on top of the meat, generously grease with mayonnaise (you can add a little garlic for piquancy), and place in the oven preheated to 170 degrees for 40 minutes. After the time has passed, remove the pan, sprinkle the beef with grated cheese, and bake for another 10 minutes until golden brown.

Note: If mayonnaise does not seem like a very healthy product to you, you can replace it with high-quality thick sour cream or cream with a fat content of 20%. In this case, the beef will become much more tender.

Recipe 3: Chicken with mushrooms in pots

To prepare the dish you will need: 800 grams of chicken thighs, 200 grams of champignons, one onion, five medium potatoes, 200 milliliters of cream, 100 milliliters of water, 50 grams of hard cheese, salt, pepper, and spices to taste.

Peel the potatoes, rinse them well under running water, and cut them into medium-sized cubes. Cut the chicken into small pieces, lightly salt and pepper, and then fry in a frying pan greased with vegetable oil. There is no need to bring it to readiness, just the appearance of a golden crust.

Peel the onion and chop it. Cut the mushrooms into thin slices, then fry in a frying pan along with the onion for five minutes. Take a deep bowl, mix the cream with water, and add salt, pepper, and spices – paprika, turmeric, and dried basil are ideal.

The next stage is laying out the ingredients in pots. The first layer is chicken, the second layer is potatoes, the third is mushrooms and onions, the fourth is creamy filling and the fifth is grated cheese. The liquid should be no more than half the pot. Cover the containers with lids and place in the oven preheated to 180 degrees for one hour (depending on the power of the oven, it may take more or less time).

Recipe 4: Pork roll with mushrooms and cheese

To prepare the dish you will need: 700 grams of pork tenderloin, one tablespoon of Dijon mustard, one tablespoon of soy sauce, 50 grams of soft cream cheese, 200 grams of champignons, three cloves of garlic, two tablespoons of vegetable oil, 75 grams of breadcrumbs, 200 grams spinach, a pinch of dried thyme, a pinch of dried oregano, salt and ground black pepper to taste.

First, you need to prepare the filling. To do this, cut the mushrooms into thin slices, rinse the spinach well under running water, dry with a paper towel and chop, peel the garlic, and pass through a press.

Place a frying pan greased with vegetable oil on the stove, wait until it warms up, then fry the champignons along with the garlic with the addition of soy sauce – five minutes will be enough.

Add the spinach and cook the filling for another five minutes – the greens should not lose their rich color. Once the time is up, remove from heat, cool, and mix with the remaining ingredients – breadcrumbs, cream cheese, thyme, and oregano.

Take a piece of tenderloin and cut it lengthwise so that it opens like a book. Wrap in cling film and beat thoroughly with a hammer so that the thickness of the pork does not exceed one centimeter.

Place the mushroom filling with cheese and spinach inside, wrap it in a roll, and secure the edges with toothpicks so that it does not open during baking.

At the end, make a “fill”: mix mustard with vegetable oil and brush the roll with this mixture, sprinkling salt, pepper, and spices on top.

Place the pork on a baking sheet and place it in the oven, preheated to 230 degrees for 30 minutes (it may take a little more or a little less time, be sure to check for doneness).
